I was recently in Tasmania and discovered the most delicious granola brekky at Daci Daci bakery, and when I got home I just couldn’t go back to my boring supermarket toasted muesli. Since they don’t ship interstate, I decided to have a go at creating my own version inspired by their delicious recipe.

Ingredients
- 2 cups nuts (1/3 cup pistachios, 2/3 cup almonds, 1/2 cup hazelnuts 1/2 cup pecans)
- 1/3 cup seeds (pepitas)
- 1/2 cup coconut oil *
- 1/2 cup maple syrup
- 2 cups dried fried (1/2 cup cranberries, 1 cup apricots & 1/2 cup dates)
- 1/2 cup coconut flakes
How to Make It
- Pre-heat your oven to 170 degrees C.
- Combine oats, nuts, seeds, coconut oil & maple syrup in a large bowl.
- Spread onto flat baking sheets in an even layer (I used sheets with a lip to avoid throwing it everywhere when “stirring” later on)
- Bake until lightly golden, approximately 22 minutes (add the coconut flakes & stir halfway through cooking time).
- Once it has finished toasting, add the fruit and mix it through. You can do this either straight away when it comes out of the oven for slightly chewier fruit, or wait until it cools completely.
- Store in an air-tight container once it is 100%, totally, completely cooled down.

Options for Variety
Try adding a teaspoon of vanilla extract for a deeper flavour.
You could also add 1/2 cup rough chopped 70% dark chocolate after it has cooled completely for an indulgent twist.
Nutrition Information
I typically have 50 grams of this granola with fresh strawberries, blueberries and strained natural Greek yoghurt for breakfast. This nutrition info is based on the granola only, using mostly Coles and Woolworths brand ingredients.
Just be careful – it’s delicious and more-ish and it would be easy to get carried away… It is quite calorie dense, so keep an eye on your portion size if you’re mindful of your intake.


* My dietitian recommended switching the coconut oil out for a light olive oil. Coconut oil is popular and delicious, but it has a very high percentage of saturated fat. I’ve still got some coconut oil to use up, so I’ll try that next time and update the post!
Cost
Initially I spent about $50 on ingredients the first time I made it. I calculated that it cost me $20 to make up one batch based on the recipe above, and it gave me 28 serves (at 50 grams per serve). As far as I remember, none of the ingredients were on sale, so you may be able to do it cheaper it you keep an eye out for supermarket specials.
For 71c / serve, this is far superior to any supermarket cereal or granola, packed with so much goodness!
I’ve read that you can store it in the freezer if you won’t use it up in a week or so, but at the rate that my hubby and I go through it between us, we haven’t had to try that yet!
